    Easy, quick, and delicious!
    This is a deceptively simple cookbook. But so many wonderful recipes that can be made quickly and easily. Highly recommended as a basic in your kitchen. Kind of what Joy of Cooking was decades ago, but with an Instant Pot.

    Simple recipes, good tips. The recipes especially for entrees are simple, quick, and delicious. They are a good starting point to modify to your taste. I use a 3-quart pot, so I just halve the quantities, keep the same timing. I use this book several times a week. Glad I bought it!

    Very easy to use and follow
    This is a book for all people, especially busy ones who love to look and don’t have time to plan ahead. I don’t have a lot of time to actively babysit my meals in the Instant Pot so this book is a godsend. Lauren’s expertise as a recipe developer, avid Instant Pot user, and busy person is apparent from the first page. The recipes are straightforward, easy to follow, and seem easy to work into a weeknight repertoire. There are tons of easily recognizable classic dishes (hi there, Spaghetti and Meatballs), some very smart and snappy low-carb and plant-based swaps (hello, Kung Pao Cauliflower!) as well as some zippy new ideas (I see you, Lentil Sloppy Joe Lettuce Wraps). I’m looking forward to planning all of my dinners with inspiration from Clean Eating Instant Pot Cookbook.

    I’ve recently been trying to eat a bit cleaner and provide my family with healthier options as well, with a non-negotiable rule of tastiness. I’m a grad student and a mom of three young kids, so spending a ton of time cooking and cleaning just isn’t in the cards for me right now. Enter: this cookbook! The recipes are delish, easy to follow, and I feel so good after eating everything I’ve tried. I love my instant pot and love the variety of recipes included. Karen has done it again!

    I plan to try a lot of these! Some of the recipes require special cookware for the Instant Pot, but many don’t, which I appreciate. Instructions appear easy to follow

    Convenient and Easy-to-Follow Cookbook
    I was provided an advance review copy of this cookbook. I’ve tried a few recipes so far. I’m an amateur cook and one of the things I love is that it this book combines so many things: the basics of clean eating, the basics of instapot usage (so you don’t have to manage the recipe and, separately, the cookware instructions). The recipes I’ve made were yummy and it’s helping boost my confidence in the kitchen, as well as teaching me to make healthier choices. I highly recommend this book!

    We weren’t impressed with this one. Recipes we tried thus far are a bit bland.
